Lotte Tour Development announced Wednesday that Grand Kitchen, the buffet restaurant at Grand Hyatt Jeju inside the Jeju Dream Tower integrated resort, has been relaunched with a menu centered on K-food.
New signature dishes include Jeju black pork samgyeopsal grilled over straw, premium Korean beef sirloin (grade 1 or higher), fried back ribs, LA galbi in a special sauce and dombe-gogi. The menu also features seafood — grilled Jeju hairtail, snow crab, soy-marinated and spicy marinated crab, abalone sashimi and raw fish rice bowls — alongside assorted Korean pancakes, sundae and fried chicken. Desserts include traditional yakgwa, Jeju Karrot cake and hallabong scones.
"Guests can enjoy the most popular hansik dishes and Jeju culinary specialties all in one place," a Lotte Tour Development official said. "Grilled freshwater eel, which is rarely found at buffets, is prepared fresh tableside by a chef at the live kitchen station."
Grand Kitchen is led by Executive Chef Kim Young-min, who has more than 20 years of experience, including a stint as head chef at Fontana, the buffet restaurant at Wynn Palace integrated resort in Macau. The restaurant's seven stations — including a Korean hot food station, a grill and a seafood counter — are staffed by about 30 chefs, including Kim.
Located on the fourth floor, Grand Kitchen charges 60,000 won ($44) per adult for breakfast, 75,000 won for lunch and 119,000 won for dinner. Children aged 5 and under are admitted free.
