Cooperative collects high-fat, high-protein Jersey milk from dedicated farms; expands ice cream and pudding lineup in quality-focused bid
Seoul Milk Cooperative is stepping up its push into the premium dessert market, leading with domestic Jersey milk. Its strategy centers on expanding its product lineup to target both B2C and B2B channels at the same time.
Jersey milk comes from Jersey cattle, a breed originating on the Isle of Jersey in the English Channel. It contains more nutrients than regular milk — 130 percent more protein and 114 percent more calcium — and is rich in milk fat, giving it a thick, creamy flavor. The variety is also known as Royal Milk or Golden Milk.
Seoul Milk became the first company in South Korea to launch a Jersey milk product in 2018 and now produces and collects 100 percent domestic Jersey milk from the country's largest dedicated Jersey farm. Jersey cattle are compact in size, allowing more animals to be raised per unit of land. They also emit roughly 80 percent of the carbon produced by Holstein cattle, drawing attention as an eco-friendly breed with a stable supply.
The cooperative moved into the B2B market first. Since May, Seoul Milk has been supplying "Jersey Milk Soft Mix (1L)," a B2B-exclusive product, to franchise cafes and bakeries. The company identified growing demand for premium soft-serve ice cream mixes with milk fat content of 10 percent or more, as more consumers seek a rich, dense and chewy texture. The A2 protein found in abundance in Jersey milk also makes it easier to digest for consumers who are sensitive to dairy products.
B2C launches have followed steadily. In September last year, Seoul Milk released "Jersey Milk Cone," a premium ice cream made with 58 percent domestic Jersey milk and 9 percent milk fat, using Seoul Milk butter to bring out the full, nutty flavor of the raw milk. The following month, it introduced "Jersey Milk Pudding," which contains 83 percent domestic Jersey milk. In April, the cooperative added a large-format cup product, "Jersey Milk Ice Cream (474ml)," made with 50 percent domestic Jersey raw milk. The line has drawn a positive response for using minimal natural ingredients and letting the flavor of the raw milk speak for itself.

"We will leverage our high-quality raw milk competitiveness to respond to rapidly shifting milk consumption trends while securing new growth drivers."
