World Institute of Kimchi applies starter culture technology to small and medium-sized enterprises' production lines
Korean researchers have successfully developed a kimchi starter culture that addresses the longstanding problem of taste and quality degradation during overseas export. Applying the culture can extend the period during which kimchi maintains consistent flavor and quality from about 30 days to as many as 45 to 60 days.
The World Institute of Kimchi said it held a performance-sharing forum for its 2026 kimchi starter culture distribution project with the Ministry of Agriculture, Food and Rural Affairs on Wednesday, exchanging results on quality management and export outcomes among companies that have applied the starter culture on their production lines.
Because kimchi undergoes continuous fermentation, its ripening speed and flavor vary depending on the season, temperature and ingredients used. Small and medium-sized kimchi producers have particularly struggled to reduce seasonal fermentation variation while maintaining consistent taste. For long-distance exports to the United States and Europe, quality control is even more demanding, as fermentation continues throughout the shipping process.
To address these challenges, the institute launched a starter culture development project in 2013, identifying superior lactic acid bacteria suited to kimchi fermentation and quality preservation. Since 2020, it has worked with the Ministry of Agriculture, Food and Rural Affairs to support the application of the technology at production facilities of small and medium-sized kimchi companies.
Participating companies said that after adopting the starter culture, seasonal fermentation variation decreased, allowing them to manage production and shipping schedules more reliably. They also said that differences in fermentation levels across product batches were reduced, helping them maintain consistent taste and quality.
The boost to export competitiveness has been particularly notable. Among participating companies, no overseas quality complaints related to yeast or mold have been filed since the starter culture was introduced. One kimchi exporter reported that export volume for starter culture-applied products rose approximately 2.2 times in 2025 compared with 2023, while export revenue grew about 2.7 times over the same period.
Applying the starter culture also extends the window during which kimchi can maintain uniform taste and quality. According to the institute, kimchi made without a starter culture has a quality retention period of about 30 days, while kimchi produced with the culture can maintain quality for up to 45 to 60 days — a significant advantage for exported kimchi that must endure long-distance shipping.
"The kimchi starter culture and the core application technology developed by the institute are being put to use at actual company production and quality management sites," said Park Hae-woong, a researcher at the World Institute of Kimchi. "We will actively reflect the needs of companies to improve the practical usability of the starter culture and continue supporting stable production and quality management for small and medium-sized kimchi enterprises."
