Seoul Shilla Hotel announced Wednesday that it is launching a rosé grapefruit bingsu at The Library, the hotel's lounge and bar, to expand the venue's bingsu lineup.

The hotel has been rolling out its signature apple mango and honeycomb bingsu on a seasonal basis as part of an effort to position bingsu as a premium dessert enjoyed year-round.

The rosé grapefruit bingsu will be available for a limited fall season from Thursday through Dec. 15. The dessert features layers of grapefruit flesh stacked in the shape of a rose, topped with sparkling champagne jelly and gold powder for a striking visual presentation.

The flavor profile balances the grapefruit's natural tartness and bitterness with the bright floral notes of hibiscus and the sweetness of honey. Soft milk ice and champagne jelly made with Dom Pérignon Brut round out the varied tastes and textures.

The bingsu is also available as a pairing with Dom Pérignon, the premium champagne brand, for a more elevated dining experience.

Condiments include vanilla ice cream with honeycomb and a grapefruit yogurt, allowing customers to customize the dessert to their taste.

"Through Seoul Shilla Hotel's signature bingsu lineup, which showcases a new charm each season, we plan to offer customers a special culinary experience," a hotel official said.
